Ingredients:
1 Tbsp butter
1/4 cup chopped onion
1/2 garlic clove, mined
3 cups chicken broth
1/4 tsp nutmeg (optional)
1/8 tsp pepper
1 pkg (10oz) fresh or frozen chopped spinach
1/2 cup acini de Pepe pasta, uncooked
Grated parmesan cheese
Directions:
Cook and stir onion and garlic in hot butter until tender but not browned.
Add chicken broth and bring to a boil.
Add pasta, nutmeg, and pepper; simmer about 5min.
Add chopped spinach and simmer 5min, stirring occasionally.
Season to taste with salt, if desired. Sprinkle with cheese.
