Ingredients:
2/3 cup sugar
2 eggs
3 very ripe bananas mashed
1 teaspoon vanilla
2 cups quick mix
1/2 tsp baking soda
1/2c buttermilk
1⁄2 c nuts
1 tbsp Lemon juice
INSTRUCTIONS:

Preheat the oven to 375°F. Grease a 12-cup muffin tin with baking spray or line it with baking cups.

In a large mixing bowl, beat the sugar, vegetable oil, eggs, bananas, and vanilla with a whisk or hand mixer.

In a small mixing bowl, combine the remaining ingredients. Then, mix the dry mixture into the wet mixture until just combined.

Divide the muffin batter evenly into the muffin cups. Bake for 17 to 20 minutes or until a toothpick inserted into the center comes out clean. When done, immediately remove the muffins from the muffin tin and place them on a cooling rack
