Ingredients:
1 1⁄4 c Pudding and Pie Mix
2 eggs
2 2⁄3 c milk
1 tsp vanilla
2 tbsp butter
Directions: Combine pudding mix and 1 cup of the milk in a heavy saucepan. Stir until smooth. Gradually add remaining 1 3 ⁄ 4 c mil cook over medium heat about 5 to 7 mins. Stirring constantly, until mixture comes to a boil and thickens remove from heat, gradually add half of mixture to beaten eggs in a medium bowl. Mix well, blend egg mixture slowly into the remaining hot mixture in a saucepan cook about 1 minute, stirring constantly, until mixture just begins to boil. Remove from heat, stir in vanilla and butter. Cool then pour into the pie crust and refrigerate 2 to 3 hours until firm. make s one 9 inch single crust pie
