Ingredients:
1 lb. Roma tomatoes
1 English cucumber
1/2 medium red onion, sliced
2 avocados, diced
Optional, add toasted pine nuts
Whisk together:
2 T EVOO (or sunflower oil)
Juice of 1 lemon (about 2T)
1/4 c (1/2 bunch) cilantro, chopped
1 t sea salt or 3/4 t sea salt
1/8 t black pepper
Combine all ingredients.
