Buttermilk Pancakes

Ingredients:
3 Cups all-purpose flour, or use 1/2 wheat flour
3 tsp baking powder
1 1/2 tsp salt
1 1/2 tsp baking soda
3 beaten eggs
3 Cups buttermilk
3 TBS cooking oil

Directions:
In a large mixing bowl stir together dry ingredients. In a smaller mixing bowl mix eggs, milk, and oil. Pour liquid ingredients into dry ingredients until blended but still slightly lumpy. Eggs may be separated as in the waffle recipe and egg whites whipped till stiff peaks form and folded into batter, if desired.
