Ingredients:
1 cup Quinoa or couscous prepared as directed and let cool
1-2 bartlett pears diced and peeled
2 green onions sliced
4 slices of bacon crumbled
1-2 cups fresh spinach
1 red bell pepper diced
1/4 cup slivered almonds roasted (bake at 350 8-10min)
Dressing:
1/3 cup oil
1/3 cup rice vinegar
2 TBS soy sauce
2 tsp sesame oil
1/4 tsp minced garlic
2 TBS sugar
1/4 tsp ground ginger
Directions:
Mix and serve or chill for 1 hour.
