Ingredients:
1 1/2 lbs. plum tomatoes
1 lb penne pasta (cook as directed)
1/4 cup chopped cilantro
3 chicken breasts, seasoned & grilled
6 oz jack cheese
2 TBS red wine vinegar
1 tsp salt
1/4 cup oil
1-2 cloves garlic
Directions:
Cook pasta according to box and drain. Grill chicken while cooking pasta. Put all ingredients in large bowl while all warm and mix. (cheese will melt.) Serve while hot!
