Ingredients:
1 pkg crisp chocolate wafer cookies
1 pint heavy whipping cream
2-3 TBS powdered sugar
1 tsp vanilla
1 pkg mini marshmallows
Crushed peppermint candies (Originally = a roll of pep-o-stick lifesavers)
Directions:
Crush the chocolate wafers. Line bottom of a cake pan, reserving about ½ cup of the crumbs. Whip the cream and add powdered sugar and vanilla. Stir in the mini marshmallows and the crushed peppermint. Spoon mixture carefully over the chocolate crumbs. Use the remaining crumbs to sprinkle over top. Refrigerate for several hours before serving. Cover any leftovers.

This was a favorite dessert in the Lee family. On at
least a few occasions, it was even requested as a substitute for
birthday cake. When I was in Primary my mom planned to serve this for
dessert at a Daddy-Daughter dinner one year. She and her committee
carefully decided to call this dessert “Chocolate Peppermint Delight”.
Unfortunately, I didn’t get the memo. Seated just across from the stake
president and bishop, I saw them starting to bring out dessert and
excitedly reported that we were having “Dirt Pudding.” So much for
trying to change family names!
