Coconut Bread

Ingredients:
4 eggs
2 C sugar
1C vegetable oil
2 tsp coconut extract
3 C flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 C buttermilk or sour milk
1 C coconut flakes
1 C chopped walnuts

Directions:
In a large bowl beat 4 eggs.  Add sugar, oil, coconut extract, flour, soda, baking powder and salt.  Mix.  Add buttermilk, coconut, and walnuts.  Pour in well greased bundt pan.

Bake at 325 for 1 hour.

Pour glaze over top while in pan while warm but not hot.

Glaze: Boil for 5 minutes.
1 C sugar
1/2 C water
2 TBSP butter

Remove from heat and add 1 tsp coconut extract.  Let stand 4 hours.

*To remove bread from the pan easier, place in a warm oven for a few minutes.

I got this recipe from my mom but I don't know where she got it.  This is a bread but it's like a cake too, pretty sweet.

The picture I found that looks pretty similar.
