Chicken Dijon Tidbits

Ingredients:
2 whole boneless, skinless chicken breasts
¼ cup butter
2 tsp. Dijon-style mustard
1 clove garlic
1 tsp lemon juice
1/8 tsp. salt
¼ cup fine bread crumbs or cracker crumbs
2 Tbsp  parmesan cheese

Directions:
Cut chicken into ¾ inch cubes.  In skillet, melt the butter and stir in mustard, garlic, salt, parsley and lemon juice. Add chicken, sauté over low heat 5-10 minutes turning chicken until browned or cooked.  Toss in crumbs and cheese until coated.  Serve warm.
