Grandma Rose Merrell Scott's Lemon Pie

Ingredients:
2 Cups Boiling Water
1 Cup Sugar
3 T Cornstarch
2 T Flour
1/2 tsp Salt
3 Eggs (separated)
1 T Butter
1/3 Cup  or (5 T) Lemon Juice

Directions:
Mix Sugar, Cornstarch, Flour, and Salt together dry. Stir into boiling water. Cook until clear. Remove from heat. Beat Egg Yolks, stir into mixture. Add Butter and Lemon Juice. Pour into a baked pie shell.
For top: Beat Egg Whites with 1/4 tsp. Cream of Tartar and 3 T Sugar until makes a peak. Spread on the top of the pie touching all edges completely and brown slowly in the oven.
