Dollie’s Salsa

Ingredients:
1 bag frozen white corn
2 cans of black beans, drained and rinsed well
    (I usually cook my own   3 cups)
1 large green pepper
1 large red pepper
1 red onion
5 roma tomatoes
2-3 cloves garlic  1  1/2 TBSP minced
1 bunch cilantro
2 mangos or 1 fresh pineapple
1/2 cup seasoned rice vinegar
1/4 cup balsamic vinegar
2 tsp cumin
1 green chili or 1 can (4oz) diced green chilies
2 fresh yellow peppers (small) seeded and chopped
Juice of 1 lime
Salt and pepper to taste


Directions:
Chop all veggies and mix well.  Store in a glass container.  Be careful the yellow chilies will burn for days!
