Spinach Salad

Ingredients:

Salad:
1 bags of Spinach, washed, stemmed, and torn to bite-sized pieces
1 purple onion, sliced thinly into rings (I don't use the whole onion!)
3/4 lb mushrooms, sliced
3/4 lb swiss cheese, sliced into long, thin pieces
1/4 lb bacon, cooked crisp and crumbled
(Optional additions - grape tomatoes, oversized croutons, walnuts)

Dressing:
1 1/2 TBS poppy seeds
1 1/2 Cup oil
2 green onions/scallions chopped
2/3 tsp prepared mustard
2/3 Cup white vinegar
2/3 cup sugar
1 1/2 tsp salt

Directions:
Dressing:  Mixed in a blender, then refrigerate several hours
Salad: Combine all ingredients and toss with dressing just before serving.
