Banana Bread/Muffins

Ingredients:
1/3 cup melted butter
3-4 ripe bananas, smashed
1 cup sugar ( can be reduced to 3/4 cup)
1 egg beaten
1 tsp vanilla
1 tsp baking soda
1 1/2 cup flour

Directions:
Preheat oven to 350. With wooden spoon mix butter into mashed bananas in large mixing bowl. Mix in sugar, egg, and vanilla. Sprinkle the baking soda (and pinch of salt if using unsalted butter) then add the flour and mix. Pour mixture into one of the following...
(For Bread)
Buttered 4 x 8 loaf pan Bake for 1 hour or Bread Machine under quick bread setting.

(For Muffins) Standard muffin tin Bake 10-15 min. or Mini muffin tin Bake 9-10 min.
