Cherry Dream Pie (No Bake)
Ingredients:
(Filling)
8 oz pkg cream cheese softened (optional extra 4 oz for a more cheesecake flavor)
8 oz cool whip
1/2 cup powdered sugar
1 tsp vanilla extract
1 can cherry pie filling (optional strawberry topping recipe below)
(Crust)
1 1/4 cups fine graham-cracker crumbs
1/4 cup sugar
6 TBS butter
Directions:
(Crust)
In small bowl melt butter in microwave.
Mix with cracker crumbs and sugar.
Press firmly into 9-inch pie pan.
Bake in moderate oven for 6 minutes or until browned. Cool.
(Filling)
Whip cream.
Meanwhile blend powdered sugar into softened cream cheese.
Fold in whip cream, and add vanilla.
Line pie crust with cream mixture and chill. Then add cherries on top.
(Optional Strawberry topping)
1 cup water
3 tablespoons cornstarch
2 1/2 cups frozen strawberries, thawed and cut into bite size pieces
3/4 cup white sugar
Whisk water and cornstarch together in a large saucepan. Stir strawberries and sugar into the water.
Cook strawberry mixture over medium heat until thick, about 10 minutes.
Allow to cool completely before use.

This recipe came from my sisters junior high home economics class. It is my dads favorite dessert, he always requests it on every occasion. My husband likes a more cream cheese flavor so I will add an extra 4oz of cream cheese and I am not a big cherry fan so I like to make it with strawberry topping or sometimes even no topping at all. If you love chocolate try the Heavenly Oreo Dessert it is similar in the cream cheese layer but with chocolate pudding and a oreo cookie crust.
